Raw materials imported during the day
Ingredients at UME are imported fresh every day from reputable suppliers at famous fish markets such as Toyosu (Tokyo), Hokkaido and Kyushu, ensuring perfect freshness.
In particular, we apply Shime technique (traditional Japanese seafood preservation) to enhance the flavor, helping each piece of fish reach perfection in texture and natural sweetness.
